150 gm mixed salad leaves
4 spring onions (chopped)
2 cloves of garlic (grated)
200 gm pumpkin (cut into half inch pieces)
1 tablespoon of sunflower or peanut oil
200 gm prawns (clean and de-vein)
1 tablespoon sesame seeds (toasted)
Dressing :
1 teaspoon sesame oil
1 tablespoon sunflower oil
1 and 1/2 teaspoon soy sauce
1 and 1/2 teaspoon fish sauce
1 tablespoon rice wine vinegar
1 teaspoon light brown sugar
1/2 teaspoon of fresh ground black pepper
Mix well all the salad dressing ingredients.
Preheat oven to 200 degrees C.
Layer the pumpkin pieces in baking tray then toss in the grated garlic, oil, salt and black pepper. Bake for 15 to 20 minutes till the pumpkin pieces are caramelized and cooked.
Then sauté the prawns in a pan over medium heat with a little salt and pepper for 5 to 6 mints or till they are cooked and turn pink.
Let the prawns and pumpkin cool down before you assemble the salad.
Toss everything together with the dressing and then sprinkle over the toasted sesame seeds.
