For this I used Japanese sweet potatoes, but you can use any type of your choice, just try to get the organic ones.
2 organic sweet potatoes (no need to peel)
Half a Lemon
50 gms feta cheese (crumbled)
1 tablespoon extra virgin olive oil
Freshly ground black pepper (to taste)
A bunch of fresh parsley (chopped)
No need to add salt as feta cheese is very salty.
Dice the sweet potatoes about an inch and put them in a microwave proof bowl, then place half a lemon in the middle.
Cover the bowl with a cling film and microwave over medium for 15 to 20 mnts depending on the type of potatoes you use.
Once the potatoes are cooked in their own steam, remove the lemon. And toss in the olive oil, black pepper, parsley and cheese.
Serve it warm on a plate and drizzle over a few drops of extra virgin olive oil.
