500 gm of starchy potatoes
(cut into 1 inch and boiled in heavily salted water, add a little turmeric in the water for colour)
50 gm duck fat
Pre heat oven to 200 degrees C and place the wire rack on the top shelf of the oven.
Oil a roasting or baking tray with a little regular olive oil or sunflower oil.
Layer the potato pieces, and sprinkle over with the following ingredients :
1 teaspoon cayenne pepper
1 tablespoon semolina
2 cloves of garlic (grated)
1 teaspoon of dried thyme
Melt the duck fat and pour it hot evenly over the potatoes.
Roast in the oven for 15 to 20 minutes, then turn and move the pieces around and roast for another 10 to 15 minutes. They should turn crisp and golden.
Serve hot.
