1 tortilla bread
25 gm cheddar cheese (mild or sharp, as you prefer)
2 to 3 slices of smoked ham
1 spring onion (chopped along with some green parts)
Ground black pepper (to taste)
A little regular olive oil or sunflower oil to brush the tortillas
Put a griddle on medium heat.
Brush a little oil over the tortilla, then on one half of it layer the ham, cheese and spring onion and sprinkle some ground black pepper.
Fold it with the rest half and place it on the hot griddle, press it hard with a spatula for 2 to 3 minutes. Then turn it over and let it grill for another minute or two.
Cut into 2 or 3 slices and serve hot.
