Frittata with Potato and Cheddar Cheese


4 large eggs
4 green onions (chopped)
A small bunch fresh parsley (chopped)
1 large potato (boiled in salted water, drained & sliced into about half inch)
100 gms grated cheddar cheese (sharp or mild as you prefer)
2 tablespoons of full fat milk 
1 teaspoon regular olive oil and about 20 gms of butter
Sea salt and freshly coarse black pepper

Pre heat oven to 180 deg.

Beat the eggs with salt, pepper and milk till foamy.

Heat the oil and butter in a pan over medium heat, sauté the onions with the boiled potato pieces till onions turn transparent. Spread the mixture evenly in the pan and then try to evenly pour over the egg mixture. Turn off the heat and sprinkle the chopped parsley and cheese.

Then transfer the pan into the oven and bake for 5 to 7 minutes.

Cut into slices and serve hot.
