Corn Fritters



250 gms frozen or fresh sweetcorn (blitz coarsely in a food processor)
3 green onions (chopped)
1 large clove of garlic (chopped finely)
Fresh parsley (a handful chopped)
Salt and pepper to taste
1 heaped tablespoon cornflour
1 egg
50 gms mild cheddar cheese (grated)
half a cup of full fat milk (luke warm)

Sunflower oil or any odourless oil for pan frying (as the fritters are best when fried with minimal oil)

Heat very little oil in a pan or griddle over medium heat.
Put all the ingredients in a bowl and mix well to form a pan cake like batter.
Then spoon them over with a tablespoon, making 4 to 6 at a time. 
Cook for 4 minutes and then turn them over and cook for another 2 minutes.

You should get 10 to 12 fritters out of this batter.
