Strawberry (no-bake) Cheesecake


What makes this no-bake cheese cake a little different from other no-bake cheese cakes is the addition of sour cream with cream cheese & whipping cream, it will not give you that perfect firm look but the texture & smoothness is worth it. And the very light not too sweet topping keeps the flavours balanced.

Ingredients :


For the base : 200gms of digestive biscuits, 80gms of softened unsalted butter


For the cheesecake : 250gms of creamcheese, 150gms of full fat whipping cream, 

100gms sour cream, 80gms caster sugar

For the topping : 250gms of fresh strawberries, few drop of  fresh lemon juice, 

4 tblspns of caster sugar and a splash of water

Method : 


Blitz the butter & biscuits in a food processor till they form a wet sand texture. 


Tip them into an 8inch cake tin and press firmly down into the base to create an even layer and chill in the fridge for half hour.


In a bowl whip the cream till it forms soft peaks.


In another bowl whisk in the creamcheese, sour cream & sugar till smooth texture. (make sure the creamcheese is soft and at room temp.)


Then fold in the whipped cream & cheese mixture together gently with a spatula.


Take the base out of the fridge and pour in the mixture smoothing out the top with back of a spoon, then cover with a cling film and put it back in the fridge to set overnight.


Prepare the topping few hours before serving. Take 4 large pieces of strawberries, cut each in half. Then chop the remaining berries in small sizes, and tip them in a non-stick pan with few drops of lemon juice & caster sugar over medium heat and bring to a boil, and start crushing the berries till they almost melt down. It is totally up to you if you want a thick syrupy glaze or a thin syrup to drip down over the cake. 


When the syrup is done to your desire, take it of the heat and dip in the halved strawberry pieces one at a time, take them out and let them rest in a plate. When the syrup reaches room temp. strain it in a bowl.


Finally take the cheese cake out of the fridge, pour over the syrup and decorate it with the halved & glazed strawberries.
